Write a recipe once in baker's percentages, with live hydration, salt, and prefermented flour. Scale it to any dough weight, create a variation from a shared base dough, and print a clean copy. Your starters and preferments get their feeding schedules and hydration worked out for you.

Counter and wholesale orders in one ledger

Take wholesale orders in a few taps: search for the client, add a new one on the fly, set the quantities. Counter sales go into the shopfront ledger, and a tablet mode for the front of house prints the whole day grouped by client. Every quantity stays in step with your baseline production.

Turn a day's production into consolidated mixing groups and sequenced dough splits, with starter and preferment feeding times worked back from when you mix. Out comes a printable production sheet and a single consolidated shopping list.

bakeryOS projects your ingredient stock 60 days ahead from the plan, warns you before you run out, and works out order-by dates from each supplier's lead time and delivery days. Who's behind bakeryOS

I'm Gianluca, an Italian baker. From 2020 to 2024 I ran Panicuocoli, a certified organic sourdough microbakery in the Helsinki area, with a handful of wholesale clients and a small retail counter. I lived the chaos this tool fixes: mixing at four in the morning, orders arriving on WhatsApp, one spreadsheet for recipes, one for costs, one for who ordered what. I am also a doctoral researcher at Aalto University, where I study baking as a form of craft knowledge, the things a baker knows in the hands that never make it onto paper. bakeryOS grew out of both: the daily grind of running the bakery, and years spent understanding how bakers actually work. I built it as the tool I wish I'd had, and I keep building it. When you write to bakeryOS, I'm the one who reads it, and I'm the one who answers.

Questions bakers ask

Because bakeryOS is a serious tool for working bakeries, and asking for a card keeps out bots and the people who copy the product. It also means that if it fits, there's nothing to do on day 15: the trial simply becomes your subscription. Nothing is charged during the 14 days, and you can cancel in one click before it ends.

Yes, in one click from your billing page, and it takes effect at the end of your current billing period: the end of the month on the monthly plan, the end of the 12 months on the yearly plan. Cancel during the free trial and you are never charged.

You can be up and running the same day. Add your starters and a few recipes in baker's percentages, and the production and planning tools start working right away. There is no bulk import yet, so recipes are entered by hand for now, which is also a good moment to tidy them up.

Yes. bakeryOS runs in the browser and is built to be used on a phone or tablet with flour on your hands, right where you work.
